Dear Anh-Dao: Your words are melody in my ears, or maybe pho fragrance to my nose ;) Thanks for the compliments. I am sure you will gravitate more and more toward your roots as you grow older and wiser. You just naturally go search it out. you won't know why, but it happens to all of us. The culantro is an expensive herbs as it is not mainstream, but within the Vietnamese community I am sure some enterprising business person will find ways to supply it. Your next challenge may be to make some pho yourself...

Hello and congratulations on a great website, from a Vietnamese (born in Saigon) person who was adopted by immigrants who came to Australia. I came here when I was 9 months old and because my adoptive parents are not Vietnamese, I haven't grown up with Vietnamese food. But I still managed to discover pho and have fallen in love with it! I must have it at least once a week or else I get grumpy :) It's interesting that I love it so much when I have not grown up with Vietnamese culture surrounding me.

I live in Melbourne which has a strong reputation for the range and quality of its restaurant scene, and I've tried pho at a few different places. In almost all cases, we do now get the garnishing more reminiscent of southern Vietnamese pho - you typically get a plate of bean sprouts, chopped fresh chilli, Thai (holy) basil, and a lemon (not lime) wedge. I've only seen it served with fresh coriander (you call it culantro) once. So your Aussie article might need a bit more of an update :)

I usually do not have 'authentic' pho because I like my veggies so I order chicken-stock based 'pho' with vegetables, but I still love the side dish of chilli, fresh herbs, lemon, and bean sprouts. I've eaten the chicken version too. I didn't know that people in other countries dip their noodles in hoisin or other sauces; the thing I love about pho is it's so fresh, and I prefer my accompaniments to be fresh (fresh chilli, fresh herbs) rather than the sauces.

Now I want a bowl for dinner!!

I've been looking for a place to try some of this great pho you're talking about on my usual table booking site but can't seem to find anything in London. Do you have any recommendations for a place to go over here or am I going to have to book myself a holiday? On second thought, forget the advice; I'll talk to a travel agent cause I think that'll be for the best. My best that is.
